no bake cake batter truffles







found this lovely recipe at the girl who ate everything website
made them for thanksgiving dinner at my uncle ozzy's house
they turned out great not to mention they looked so pretty
but be forewarned however,
they are RICH
1/2 truffle will suffice
believe me!

Cake Batter Truffles:
  • ½ cup unsalted butter, softened
  • ½ cup white sugar
  • 1 ½ cups flour
  • 1 cup yellow cake mix
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt
  • 3-4 Tablespoons milk
  • 2 Tablespoons sprinkles
Truffle Coating:
  • 16 ounces (8 squares) almond bark (or white candy melts)
  • 4 Tablespoons yellow cake mix
  • sprinkles

Beat together butter and sugar using an electric mixer until combined. Blend in vanilla.  Add cake mix, flour, salt, and vanilla and mix thoroughly. Add 3 Tablespoons of milk or more if needed to make a dough consistency. Mix in sprinkles by hand. Roll dough into one inch balls and place on a parchment or wax paper lined cookie sheet. Chill balls in the refrigerator for 15 minutes to firm up.

While dough balls are chilling, melt almond bark in the microwave in 30 second intervals until melted. Stir between intervals. Once melted, quickly stir in cake mix until incorporated completely. Using a fork, dip truffles into almond bark and shake of excess bark by tapping the bottom of the fork on the side of your bowl. Place truffle back on the cookie sheet and top with sprinkles. Repeat with remaining balls until finished. {Note: for smoother looking truffles, don't add cake mix to melted chocolate, just leave it by itself}
Chill cake batter truffles in the refrigerator until serving. Makes around 24-30 truffles.

it's coming!!!!

I have no idea why i am so hyped on christmas this year
i feel like the lady from the target commercial 
i had this past week off of work 
and enjoyed every single nano second
except for getting sick on thanksgiving 
boooo!  
that really sucked

got some killer egg nog tho (southern comfort- non alcoholic)
and played christmas music(my fav: pandora station- frank sinatra holiday music)
and put up some of my christmas decorations
i am no even close to being done with christmas decor 

but i just couldn't help myself...

this tree was later brought down by the great and powerful michelangelo.  i have a feeling it will be poPPing up else where in our humble abode ;)

thinkin bout making this tonight

just thought I might throw this in the ol' crock pot tonight
then hit the gym
sounds delish doesn't it


found this in a darling bog called 
such a darling blog

recipe:
2 Tablespoons butter
1/2 cup chopped onion
1 cup finely chopped carrot
1 stalk celery, finely chopped (feel free to add more celery if you like celery; I don't, so I don't add much)
1 Tablespoon minced garlic
4 cups chicken broth (I usually use a mixture of low-sodium chicken broth and broth made with chicken soup base because it gives it such nice flavor)
2 large baking potatoes, peeled and chopped
1 Tablespoon flour
1/2 cup water
2/3 cup milk
2 cups chopped broccoli
2 heaping cups shredded cheddar cheese

Melt the butter in a large soup pot.  Add onions, carrots, and celery and saute over medium heat until tender.  Add garlic and cook 1 or 2 additional minutes.  Add chicken broth and potatoes, bring to a boil, and cook until potatoes are tender.  Mix flour with water, add, and simmer until soup is slightly thickened.  Add milk and broccoli and cook until broccoli is just tender and soup is heated through.  Stir in cheese, allow to melt, and serve.

DEAR Readers,

I received an email today from a fellow blogger concerning blog infringement.  As I am the most tender hearted person on the planet, I felt absolutely terrible that someone thought I was stealing from them by copying their work and passing it off as my own.  After getting the email I immediately went back through the last 20 or so posts to make sure there were the links attached to each of my posts found on other blogs.  I assure you I have done my best to make sure each were given proper credit.  I am writing this to make sure readers of my blog are clear about how I site my sources.  If a shout out or direct reference to the title of the blog used was not given in the narrative section of the blog on top or below the picture(s) I most likely write something such as this at the bottom of each post:  "found here(linking the word here)", or "spotted and hearted: here(linking the word here)".  However, being new to the blogging world (less than a year old) a few of my old posts may not have links to their sources and for that I am truly sorry.  To this fellow blogger and her readers, my heartfelt apology for any confusion this may have cause.  Looking at this situation with a cup half full, gives me an opportunity to not only improve the clarity of my sources but also continue sharing amazing advice and ideas with others.
