Coconut Cream Pie

MY NEW little ADDICTION:
Calorie conscious, delightfully delicious, delectable dessert

Ingredients:
2 envelopes Kraft Dream Whip Topping-dry mix (unprepared)
2 3/4 cup of milk, nonfat
1 tsp vanilla extract
1 tsp coconut extract (optional)
2 (4 serving boxes) Kraft Jell-O brand fat free, sugar free pudding mixes, vanilla
1 cup of coconut toasted
Graham cracker pie crust (look for the lowest calorie count) You may also serve this as a mousse without a shell.

Directions:
Toast coconut by spreading coconut out evenly in a pan under the broil setting.  Watch at all times so the coconut does not burn.  Beat whip topping mix, 1 cup of milk, and vanilla on high for 6 minutes until very stiff (do not under beat).  Add remaining milk and pudding mixes, and coconut extract (if using).  Beat on high for 2 minutes.  Set aside 2 tbsp of toasted coconut.  Fold in remaining coconut into mixture and pour into pie shell.  Chill a minimum of 4 hrs.  Sprinkle with reserved coconut as a garnish.
